Prime – The highest quality. These steaks are the best, and many supermarkets don’t carry them. This grade will most often require you to visit a butcher.

No matter what USDA grade it is, you should always select a steak with a uniform distribution of marbling. Avoid dark reds and bright colors.

Give yourself time to rest

Steak room temperature (1 to 1 1/2 inches thick depending on your grade)

2 teaspoons salt

3 tablespoons garlic butter

The Cooking Process

Steaks should be at room temperature. This will ensure that the outside of the steaks cooks quickly once it touches the hot pan. They should be out for at least half an hour before being cooked.

Start heating your skillet. Cast-iron skillets can take up to 10 minutes before they reach the correct temperature. It’s ready when it begins to smoke.

To remove excess moisture from the steaks, dry them with paper towels. Season with salt and then coat both sides with a generous coating of salt.

Place the steaks in the hot pan and cook for about 1 minute, or until they form a crust. This is why you won’t find any oil in the recipe. It’s unnecessary and can cause a poor sear.

Once the crust has formed, it’s possible to flip the steak without it sticking to your pan. Cook the second side for 1 minutes.

Flip between the sides for 4 more minutes.

To allow the butter to melt, add the garlic butter. Spread the buttery goodness on the steaks with a spoon as they cook. This will keep the meat moist, tender, and juicy. Flip the steaks and do so every other minute.

Cook the steak for 6 more minutes.

When the steaks reach your desired temperature, remove them from the oven and let them rest for half the time.
